Pancakes!

I love pancakes everyone! So much! And, best of all, I finally got the recipe down perfectly. Part of the perfection of my recipe involves oats because they are my favorite thing to put in foods, after hazelnut extract (which I will also be adding to the pancakes when I have extra money to buy some). I make these pancakes almost every week because they are easy and beloved and we have a griddle thing for our stove, and now you can too!

First you combine 2 cups of oats with 2/12 cups of buttermilk. "Oh no! I don't have buttermilk!" That's cool! You can just use 1 1/2 tablespoons of lemon juice and enough milk to make 2 1/2 cups of liquid in a nice measuring cup. Instant buttermilk using science! Combine these in a bowl. Then add 2 slightly beaten eggs and 1/4 cup melted butter. Mix it all and set it aside.



New bowl! Sift 2 cups of flour, 1 tsp baking soda, 1 tsp baking powder, 1/2 tsp salt, 2 tbsp sugar and 1/2 cup packed brown sugar.



A bunch of white stuff sifted in a bowl is not a particularly engaging picture!

Now combine the two bowls and mix just enough to combine.



Seriously these pictures would have been better if my just-rolled-out-of-bed roommates had been willing to pose for them. Sorry readers, they are under the impression that lots of people look at my blog, despite my assurances to the contrary.
Also, I really should have sifted better here. Don't judge.

Heat you griddle or pan to low and spray with Pam or use oil or butter or whatever you wanna do. Pour 1/3 cup of batter for each cake, cook and flip when the sides are nice and solid looking and there are a couple bubbles on the uncooked side. These don't bubble so much for some reason (that reason might be my baking powder, which is weird and probably needs to be replaced) so I had to get used to the timing.




These produce enough fluffy, oat-y pancakes to feed 6 happy breakfast-ers!

Ok, I am actually cooking something else right now, so no reading today! Uh-oh! I'll be extra wordy next time, everyone will be excited.
